This is a recipe for a delicious chocolate fudge cake which is rich and moist, and need I say delicious. Putting it here partly for myself so I can remember what I did, because I have had many unsuccessful attempts in the past so I made this one up and it worked a treat.
Grease and line 2 normal sandwich tins. Preheat oven to 180 degrees.
for the cake
110g butter
150g caster sugar
2 small eggs
65g melted chocolate
150g plain flour
1 level tsp soda
1/2 tsp vanilla essence
125ml yoghurt approx
for the chocolate fudge
200ml cream
200g dark chocolate
knob butter
Cream the butter and sugar then beat in the eggs one by one.
Stir in the melted chocolate and vanilla essence
fold in the flour and soda.
Add enough yoghurt to give a nice dropping consistency.
Put half in each cake tin, bake for 30 mins.
for the ganache melt the chocolate and butter and mix in the cream.
Use some of this to sandwich the cakes together and cover the entire thing with the rest. Grate chocolate on top if you like.
