Just a simple soup recipe
- One Onion
- 900g Carrots
- one potato
- stick of celery
- 2 tsp ground coriander
- 1 litre stock
- teaspoon of honey
- ground nutmeg
- handful of fresh chopped coriander
Sweat the veg in butter over a low heat with the ground coriander for ten minutes
Add the stock and season with salt and pepper
Boil until the carrots are tender
Blitz with a hand blender
Stir in the honey, nutmeg and fresh coriander and taste for seasoning adding more salt / pepper if required.
